Yakima business owner publishes cookbook – YakTriNews KAPP-KVEW

YAKIMA, Wash. — A Yakima business owner wrote a cookbook during the pandemic to help people eat healthier and share her love of cooking.

“Food brings people together,” said Elaina Moon, owner of Healthy Eats Nutrition Services. “It’s something that people can enjoy together … it really connects people so I think that’s what I love about creating recipes.”

Moon teaches cooking classes, coaches clients on health and nutrition and helps with programs at Yakima Valley Memorial Hospital and Pacific Northwest University of Health Sciences. Now, she’s also the author of “Cooking Healthy Cookbook,” a collection of more than 75 vegetarian and plant-based recipes.

“There’s everything from breakfast to quick meals to comfort foods to dessert and everyday sauces, which is personally my favorite section because I love sauce on everything,” Moon said. “I think everything is better with sauce.”

Moon said people have been asking her to put together a cookbook for a while, but she never had the time — until the past year.

“Around October, I realized that this is the time to get this thing done,” Moon said. “Things were slowing down for me a little bit with the holidays and so I got a team together of volunteers who helped me put the book together.”

The e-book is available for pre-order on Amazon for $9.99 and will be released on Thursday, May 6. To celebrate, Moon is hosting a book release party from 10 a.m. to 1 p.m. on Saturday at the Healthy Eats classroom, 1101 W. Yakima Ave. Suite 115 in Yakima.

Moon will be signing printouts of the book’s cover page and serving up free donuts at the party.

“Come by early, get a donut and get a signed page and just enjoy the celebration,” Moon said.
